From his youngest age, Stéphane Bichon has been a passionate of cuisine. He earned his knowledge in many countries before coming back in France where he worked for renowned restaurants such as Dalloyau in Marseille, the Tour Rose in Lyon or the Bistrot Fleuri in Canet en Roussillon. In love with the Mediterranean wealths (especially the olive oil), Stéphane likes sublimating fishes and invites you to taste his ceviche which he particularly appreciates for its freshness, its colors and its olive oil filet.
His motto: Sun, south and olive oil!
At first IT specialist, Chef Phailinh alias Phai developed his cooking skills thanks to Chef Thai Ding who passed on him the knowledge of creating traditional sushis. Today, he built up more than ten years of experience after having worked in renowned establishments such as “Sushi West” and “Sushi Shop”, where he collaborated in particular with famous Chefs. Truly passionate, Phai will take you on a journey of flavors thanks to its creativity. He suggests you to come discover his sushis with shrimp Obsiblue (shrimp from New Caledonia that only he cooks in this form).
